Rich nut cake

This is one of the cakes which I dream of making right from the day I started baking cakes.The rich texture and spicy flavour of this cake would tempt anyone to ask for more.It is my mom 's favourite cake and i would like to dedicate it 2 her :) . U can also dip the dry fruits into wine for sometime (but i havent used it :) ).The difficult part of this cake is making the caramel syrup.One must be very careful otherwise the caramel would just solidify within seconds.But it is worth the effort(U would say it after tasting ).Just enjoy this colourful cake in this new year occasion.

Ingredients :
  • Butter - ½ cup
  • Eggs - 3 Nos
  • Powdered Sugar - 1 1/4 cup
  • All -purpose flour (maida)-1 cup
  • Baking powder - 2 tsp
  • Vanilla Extract - 1 tsp
  • Salt - ½ tsp
  • Dry fruits(raisin,plum,tutti-frutti) - ½ cup
  • Nuts (almonds,cashew,walnut) - ½ cup
  • spice powders (cinnamon powder, ginger powder, cloves powder, and nut mug powder)-1 tsp
Method :

1 .To make caramel syrup :
Mix ¼ cup of sugar with 1 tbsp of water and heat it until the colour darkens. And then add ¼ cup of warm water to it. Then add the vanilla extract as well.

2.Sieve maida, baking powder,spice powder,salt and keep aside. Chop all the nuts as well.

3.Take a separate mixing bowl and add butter,1 cup of powdered sugar .Mix it with a whisker or an electric mixer. While mixing add eggs one by one.

4.Then add the products of step 1 and 2 to it.

5.Preheat the oven at 200 c. Grease the baking pan with butter and maida.
Pour the cake batter into it and bake it at 200 c in convention mode for 25- 30 mins.
Once done, move the cake to a cooling rack and allow it to cool and store in an air tight container.Enjoy it with your favourite topping :) …

Plum cake looks nice :) We normally make this during Christmas time, with a little wine or rum..
