Keerai vadai

After a long break, when I just thought of blogging ,I wanted to come out with a really nice recipe. Is there anything more perfect than vadai with a hot cup of coffee on a rainy day. It is just an alternative for the regular subzi and sambar that I make with spinach and it was just a hit in my family . And the recipe is very simple too.

Ingredients :

1. Whole ural dhal - 2 cups

2. Spinach - 2 cups

3.Shallots/small onion - 6 to 7

4. Green chilli - 4

5. Ginger - 1 inch

6. Black pepper - 10

7.Curry leaves - 1 sprig

8.Coriander leaves - 1 sprig

9.Oil - For deep frying

10. Salt - As required.

Method :

1.Wash and soak ural dhal for 2 hours.Chop spinach finely and keep aside.

2.Grind ginger and green chilli first. Then add ural dhal and grind coarsely.

3.Take a bowl and add the ground mixture. Then add chopped onion, curry and coriander leaves, pepper ,spinach and finally salt.

4. Take a heavy bottom pan and pour oil. When the oil is hot , drop the batter by flattering it in your hand or parchement paper or banana leaf.

5. Deep fry in medium flame so that the vada is cooked well.

6. Serve it hot with sambar/coconut chutney.

Note :

1.Dont add water while grinding the ural dhal.If needed add very little water.

2.Cut a square piece of parchment paper and appy oil over one side.Place the batter on this side and make a hole in the center and drop it into oil.
